Who wants to be chained to a hot stove in 100 F weather? So when the temperature started to rise, I swapped our more elaborate dinner for a simple salad and bread at home, which was a welcome change. They’re quick, easy to make, and filled with fresh flavors and beneficial nutrients.

This Chinese-style chicken salad takes less than 30 minutes to make but tastes like you’ve been working in the kitchen for hours. Filled with lettuce, carrots, Japanese soybeans, boiled chicken and crispy wonton pieces in an Asian-inspired sweet and spicy sauce, every bite feels like a feast in your mouth!

Ingredient Notes Vegetables – I used a mixture of lettuce, shredded red cabbage, shredded carrots, and Japanese beans. You can easily replace it with romaine lettuce, napa cabbage, green onions or your favorite salad dressing. Chicken – I like boiled chicken breast, but grilled or grilled chicken is fine. Simply remove the bones and then chop or cut into pieces.

Deep-fried wonton strips – You can find crispy wonton strips in the salad bar at your local supermarket, or you can make them yourself at home! You can also use crispy chow mein, which is also available at most grocery stores. Optional toppings – please add sliced almonds for extra crunch or tangerines for a fruity flavour.

Asian Sesame Sauce You can use your favorite Asian sauce to save time or make your own with simple ingredients for the best taste. Mix rice vinegar, soy sauce, sesame oil, garlic chili sauce, brown sugar, and grated fresh ginger until blended. You can make ahead and store in an airtight container in the refrigerator for up to 3 days.

How to Make Deep-Fried Wontons Use an oil with a neutral flavor and high smoke point, such as peanut, safflower, or canola oil. For best results, heat the oil to the optimal temperature of 350 F to 375 F. Do not overfill the pan and cook in batches as needed. Cut wonton wrappers into strips about 1/4 inch thick.

Cover with a tea towel or paper towel to prevent it from drying out. Dip the strips in hot oil. Move the pan with a slotted spoon or spider to cook evenly and without sticking. Remove the fried wontons from the pan a little lighter than you’d like, as they will continue to brown in residual heat and become crispy as they cool. Drain on wire rack and let cool.
